We have several places in our plant that have button head fittings and one thing that has me confused is the couplers for them.

What is the story behind the 7/16”-27 NS-2 female thread many of these come with? I know they are also available with the standard 1/8 female pipe thread but many places that sell these also show this 7/16”-27 NS-2 female thread. Where does one find the 7/16”-27 NS-2 male thread to connect to these and why??

Just a guess, but in the wayback days, if you owned a CAT dozer you greased the rollers and idlers with a "High volume" pump filled with CAT roller lube which was either a thin grease or a pudding consistancy oil, depending on the temperature. I'm thinking the larger thread was so the hole the lube pumped through was big enough for this stuff to flow. For you old CAT aficionados think bellows seals! Feel free to correct me if I'm wrong, lol. Here's an adapter to 3/8" pipe:

Find your local alemite dealer, alemite makes their own and they are all made in the USA.
